  • 2 tbsp chilies in adobo sauce
  • 2 tsp smoked paprika

  • ½ whole onion

Quick vegetarian bean tacos
  • 2 tsp oil
Lightly coat the pan with about two teaspoons of oil and fry the garlic and onion gently two to three minutes.
Add the chilies in adobo, smoked paprika, and the garbanzo and black beans; mix and let cook.
Optionally half-mash the beans with a fork so they hold together in the taco; the filling is ready in about 10 minutes.
  • cilantro
  • salt
  • ½ whole jalapeno
In a mortar and pestle, grind cilantro with a little salt, then mash in about half a jalapeno.
  • lime
Mash in the avocado until a little chunky, or smooth if preferred; season with salt and lime juice.
Stir in the yogurt and taste.
  • cotija cheese
Fill the tacos with the bean filling and avocado yogurt sauce and top with a little cotija cheese.
