Ingredients
Method
Techniques
  • 5 whole chicken thighs
  • neutral oil
  • salt
  • pepper
Season the chicken thighs with neutral oil, salt and pepper on both sides.
Add a little more oil to the pan and brown the chicken only, a couple of minutes; it finishes cooking later. Remove to a clean plate or pan, not one that held raw chicken.
  • 1 whole onion
  • 2 whole sweet potato
Turn the heat down a little. Add a little more oil, the diced onion and diced peeled sweet potato; toss to coat and cook 3 to 4 minutes, stirring every minute or so.
Add a bit more oil, the garlic paste and ginger paste; mix quickly.
Garlic and ginger pastes and the spices
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 tsp coriander
  • 2 tsp smoked paprika
  • 1 tsp cayenne
  • 1 tsp cumin
Add coriander, smoked paprika, cayenne and cumin and let them toast in the pan.
  • 1 can diced tomatoes
Add the can of diced tomatoes and about a cup and a half of chicken broth; bring to a bubble.
Tomatoes, broth and peanut butter
  • 1½ cup chicken broth
  • smooth peanut butter
Stir in the smooth peanut butter until mixed in.
Bring to a simmer, nestle the chicken back in with its pan juices, cover, and cook until the sweet potatoes are soft and the chicken is cooked through; about 15 minutes in the end, against an estimated 20.
  • peanuts
  • cilantro
Finish with busted-up peanuts and a little cilantro.
Finishing with peanuts and serving on rice
  • white rice
Serve the chicken on white rice with sweet potato and sauce.
