Techniques
  • 454 g skin-on pork belly
  • 1½ tbsp plum sauce
  • 1½ tbsp white sugar
Score the meat side of the pork belly with a sharp knife without cutting through the skin, so the seasoning penetrates quickly.
  • ⅔ tsp salt
  • ½ tsp sugar
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp five spice powder
Mix the rub: per pound of meat, 2/3 tsp salt and 1/2 tsp each sugar, black pepper, garlic powder and five spice powder.
Skin side down, sprinkle the rub over the meat, opening the cuts and rubbing in, including the sides; keep it off the skin, wiping any off with a damp paper towel.
  • salt (for the skin)
Rub a pinch of salt thoroughly into the skin; after a couple of minutes, wipe off the drawn moisture and excess salt with a paper towel.
Wrap the pork belly in tin foil with the skin exposed.
Air fry at 250F for one hour.
Two-stage air frying
Increase to 400F and fry 10 to 15 minutes until the skin is crispy and golden; check the basket and adjust, as air fryers differ.
Cut into bite-sized pieces; serve with plum sauce or white sugar for dipping.
