Method
Techniques
- 1 tbsp oil
Heat about a tablespoon of oil in a large skillet over medium-high heat.
Browning the pork
- 1 lb ground pork
Add the pork, break it up with a wooden spoon and cook, stirring frequently, about 4 minutes until well browned with only a few pink pieces.
- 3 cup coleslaw mix
- 1 tsp grated ginger
Add the coleslaw mix, green onions, garlic and grated ginger; cook about 2 minutes, stirring occasionally, until tender.
- 2 tbsp soy sauce
- 2 tsp toasted sesame oil
Stir in the soy sauce and toasted sesame oil; let the filling cool a minute or two.
- egg roll wrappers
- water
Keep the wrappers under a slightly damp towel. Brush two edges of a wrapper lightly with water and put 2 to 3 tablespoons of filling diagonally across the middle; do not overfill.
Filling and rolling the wrappers
Fold in the two wetted corners, bring up the dry end and roll; place on a parchment-lined baking sheet. Repeat until the filling is used, checking wrappers are not doubled.
- oil
Spray half the rolls with oil and place them oiled side down in the air fryer basket with space between; spray the tops.
Air frying
Air fry at 350 for 7 minutes, flip, spray again and air fry about 5 minutes more. Repeat with the second batch.
