Techniques
  • 1 cup whole milk
  • 1 cup very hot water
In the mixer bowl combine a cup of cold whole milk with a cup of very hot water so the liquids are about 110 to 115F.
Warm liquids and activating the yeast
  • 2 tsp sugar
  • 2 tsp active dry yeast
Add the sugar and active dry yeast; if the yeast is not recently used, let it sit seven or eight minutes until a foamy cloud appears (a tablespoon of flour helps feed it).
  • 648 g all-purpose flour
  • 2 tsp salt
  • 2 tbsp olive oil
Mix the flour and salt; add the olive oil to the wet ingredients, then the dry; knead on low speed 12 minutes (15 to 20 by hand) to build gluten.
Oil a large mixing bowl, toss the dough in it to coat and cover with plastic wrap; rise about an hour, up to two depending on the room.
Deflate the dough, cut into eight (or ten) portions and roll each into a ball. Resting them 15 minutes makes rolling easier.
  • all-purpose flour
Flour the surface and dip each ball in a bowl of flour; roll out to 7 to 8 inches, turning to keep it round; plenty of flour so it does not stick, or there will be no pocket.
Rolling out for a pocket
Air fry one at a time at 400F for about three to four minutes without flipping, so it puffs and forms the pocket; flip only after it has puffed if it is colouring too fast.
Cool; freeze leftovers in freezer-safe bags for a month or two.
