Ingredients
Method
Techniques
- 300 g feta
- 2 cup all-purpose flour
- 3 tsp baking powder
- ½ tsp salt
- 1 tsp dried dill
Whisk the flour, baking powder, salt and dried dill together; set aside.
- ¾ cup plain Greek yogurt
- ¼ cup olive oil
- 2 whole eggs
In a big bowl whisk the Greek yogurt, olive oil and eggs, at room temperature if possible; whisk in the milk until smooth.
- 1½ cup whole milk
Add the dry ingredients a little at a time and stop mixing once combined; do not overmix, so the bread stays light.
- olive oil
Pour into a 9 by 13 inch pan greased well with olive oil or baking spray (a bigger pan or two pans gives a thinner, crispier bread). Optionally drizzle olive oil on top and sprinkle sesame seeds.
Pan size and thickness
Bake on the center rack of an oven preheated to 350F for 25 minutes, until springy and a toothpick in the center comes out clean.
Cool about 20 to 25 minutes, then cut into serving slices; serve warm.
To serve later, refrigerate; bring to room temperature and warm a few minutes in the oven or toaster oven so the feta softens.
