Cut the green pepper, red pepper and onion into approximately one inch pieces lengthwise and widthwise to match the pork.
  • 1 cloves garlic clove
  • ½ inch ginger
  • ½ cup sugar
  • ⅓ cup white vinegar
  • ¼ cup pineapple juice
  • ¼ cup ketchup
  • 1 tsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 2 tbsp cornstarch
Mix the sauce: sugar, white vinegar, pineapple juice, ketchup, Worcestershire sauce, soy sauce, oyster sauce and cornstarch.
  • 3 tbsp cornstarch
Toss the marinated pork with about three more tablespoons of cornstarch for a crusty batter-like coating.
  • frying oil
Fry the pork one piece at a time in 350 degree oil until crispy and golden brown; single fry, no double fry.

In a large wok, heat more oil and saute the vegetables until they colour at the edges.
  • 1 cup pineapple tidbits
Add the pineapple tidbits.
Add the sauce and simmer about three minutes to reduce and coat the vegetables.
  • cornstarch slurry
Add a cornstarch slurry to thicken, then toss the fried pork through until glazed and shiny.
  • rice
Serve with steamed rice.
