Techniques
  • 2½ lb apples
Heat the oven to 350.
Choosing the apples
Peel the apples, cut the flesh from the core with no seeds, and slice thinly and evenly so they cook at the same rate.
  • 2 tbsp lemon juice
  • ⅓ cup brown sugar
  • 1 tbsp flour
In a big bowl, toss the apples with the lemon juice, then the brown sugar, flour, cinnamon and nutmeg.
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg
Transfer to an eight by eight inch pan, lightly greased if wanted, and spread in an even layer.
Seasoning the apple filling
  • ¼ cup butter
Cube a quarter cup of butter small and sprinkle over the apples.
Into the pan with butter
  • 140 g old fashioned rolled oats
  • 90 g all purpose flour
  • 110 g brown sugar
  • 1 tsp cinnamon
  • ½ tsp salt
In a bowl, mix the oats, flour, brown sugar, cinnamon and salt.
Oat topping dry mix
  • ¾ cup cold butter
Add the cubed cold butter and work it in by hand (or with a pastry blender or fork) to a crumbly mixture with pea-size clumps; chill if it turns into a glop.
Working in the cold butter
Crumble the topping evenly over the apples, breaking up large chunks.
Bake at 350 for about 45 minutes, until the top is golden and the juices bubble.
  • ice cream
Cool until just warm and serve with a big scoop of ice cream.
