Techniques
  • 13 sheets graham crackers
  • ¼ cup brown sugar
  • ¾ tsp ground cinnamon
  • salt
Blend the graham crackers, brown sugar, cinnamon and a pinch of salt until pulverized.
Preheat the oven to 350 degrees. Line a 9 by 9 cake pan with parchment.
  • 6 tbsp melted butter
Mix the crumbs with the melted butter in the pan until all wet, then press down evenly with the back of a cup.
Bake the crust 10 minutes, then cool.
  • 3 tbsp butter
  • 2 whole apples
  • 4 tbsp brown sugar
  • salt
  • 1 tsp apple pie spice
  • 1 tsp ground cinnamon
  • lime juice
Melt the butter in a pan over medium-low heat, add the small-chopped apples, brown sugar, salt, apple pie spice, cinnamon and a few drops of lime juice; cook five minutes, then cool.
  • ½ cup all-purpose flour
  • 2 packet apples and cinnamon instant oats
  • salt
  • 2 tbsp brown sugar
  • 6 tbsp melted butter
For the crisp topping, mix the flour, instant oats, salt and brown sugar, then crumble in the melted butter until coated.
The oat crisp topping
  • 2 block cream cheese
  • ½ cup sugar
  • 2 tbsp sour cream
  • 2 tsp vanilla
  • 2 whole eggs
Mix the room-temperature cream cheese with the sugar until creamy; add the sour cream, vanilla and eggs and mix on low until combined.
The cheesecake mixture
Spread the cheesecake mixture evenly over the crust, top with about half the crisp topping, then the apples evenly, then the rest of the topping.
Bake 45 to 50 minutes, until a poke in the center comes out clean.
Cool completely, then refrigerate overnight or at least six hours before removing from the pan and cutting.
