Ingredients
Method
Techniques
- ⅔ cup granulated sugar
- ½ cup all-purpose flour
- 1 tsp ground cinnamon
- salt
- 1 stick unsalted butter
For the crumb topping, whisk the granulated sugar, flour, cinnamon and a pinch of salt together, then work in the room temperature butter with a fork and then by hand until it holds together. Refrigerate.
Making the crumb topping
- 1½ sticks unsalted butter
- ¾ cup granulated sugar
- 1–2 tsp vanilla extract
Beat the soft butter, granulated sugar and vanilla extract with the paddle attachment, starting low and increasing to high until light and fluffy.
- ¼ cup Greek yogurt
- 2 whole apples
Add the Greek yogurt and mix; the batter will curdle and will come back together when the flour goes in.
- 2 tbsp unsalted butter
- 1 tbsp sugar
- cinnamon
Peel, core and dice two apples. Pour the melted butter over the apples for the topping, sprinkle with sugar, dust with cinnamon and toss. Set aside.
Dice the second apple small for inside the cake.
- 1⅔ cup all purpose flour
- 1 tsp baking powder
- ½ tsp salt
Whisk the flour, baking powder, salt, cinnamon and orange zest together.
- 1 tsp cinnamon
- 1 orange orange zest
Add the dry ingredients to the mixer about a cup at a time until incorporated.
Grease a 9 by 13 inch pan and spread the batter evenly, then spread the chilled crumb topping over it and scatter the cinnamon sugar apples on top.
Bake on the centre rack at 350 degrees Fahrenheit for 35 minutes, then cool completely and run a knife around the edge.
- ¾ cup confectioners sugar
- 2–3 tbsp orange juice
- ½ tsp vanilla extract
Optional: whisk the confectioners sugar, orange juice and vanilla extract into a smooth icing and pour it over the fully cooled cake.
