Techniques
- 2 whole white onions
Put the white onions directly into the coals to char, turn smoky and sweet.
- regular green cabbage
- fresh chopped cilantro
- lime juice
- salt
Mix the cabbage with chopped cilantro, season with lime juice and a little salt, and spread on a serving platter.
- tomatoes
- 1 whole haas avocado
- pepper
Shingle sliced tomatoes over the cabbage; pit and slice the avocado and lay it over the tomatoes. Sprinkle salt and pepper over the vegetables.
When the onions are charred outside and cooked through, cut off the stem and root ends, peel away the charred exterior and chop.
- sour orange or lime juice
- pork cutlet
Toss the chopped onion with sour orange or lime juice and a sprinkle of salt and set aside to marinate.
Lay each pork cutlet on heavy plastic and pound it really thin.
- sprigs of cilantro
- warm tortillas
- spicy habanero salsa
Top the pork with the marinated grill-roasted onion and cilantro sprigs; serve with the vegetables, warm tortillas and habanero salsa.
