Techniques
- 177 g all-purpose flour
- 0.0625 tsp instant yeast
- 177 g water
- 361 g all-purpose flour
- 7 g instant yeast
Mix the pre-ferment flour, yeast and room temperature water to a slightly too thick pancake batter, wrap tightly and leave at room temperature eight hours, then refrigerate overnight.
- 2 tsp kosher salt
- 2 tbsp instant nonfat milk
- 152 g water
- 3 tbsp olive oil
Combine the main dough flour, yeast, salt, nonfat milk, the whole pre-ferment, lukewarm water and olive oil; mix on the paddle until it just comes together.
Switch to dough hooks and knead on medium-low seven to eight minutes until smooth, shiny, sticky and slack.
Roll the dough taut using its own stickiness, drop into a well-oiled bowl, cover tightly and rest two to three hours until more than doubled.
With an oiled spatula fold the dough in on itself eight times, turning the bowl; rest 30 minutes and repeat.
Turn out onto a well-floured surface, coax into a large rectangle popping only the huge bubbles, and trim to size.
Set the loaves on heavily floured parchment in a rimmed baking sheet, cover with a second inverted sheet, and proof one hour at room temperature.
Cut the parchment, spritz generously with water, sprinkle more flour, and slide onto a preheated pizza stone in a 450F oven.
Bake 18 to 20 minutes until browned and puffed, brush off the excess flour and cool on a rack at least an hour before cutting.
- 4 slices bacon
- ½ cup water
Lay four thin slices of bacon in a heavy cast iron pan, add about half a cup of water and set over medium heat; once the water has evaporated and the bacon begins to brown, flip and cook to your doneness.
- 2 whole duck eggs
- 2 slices American cheese
Fry the duck eggs sunny side up until the edges are brown and crispy and most of the white is set, lay on two slices of American cheese and cover until the cheese melts and the whites set with the yolks still runny.
- hot sauce
Hit the eggs with a few glugs of hot sauce, stack on the bacon and the bottom half of the bread.
Wrapping and cutting it bodega style
Wrap in parchment paper, folding both sides over the top, creasing down an inch-wide strip, pressing flat and tucking the ends, then cut through the paper leaving the bottom connected.
