Bacon wrapped chicken dogs

Stir mayonnaise, Dijon mustard, black pepper and cayenne together for the secret sauce and set aside.

Split the chicken breast lengthwise, then split each piece again, giving four strips.

Pair the strips thick end to thin end so each dog has a uniform girth and cooks evenly.

Season the strips lightly with kosher salt, then coat them with the secret sauce.

Wrap each dog with two pieces of thin center cut bacon, starting with the end of the strip directly underneath and finishing underneath, and do not wrap it too tight.

Transfer onto a foil lined baking sheet sprayed lightly with vegetable oil.

Bake in the center of a 500F oven about 20 minutes, until cooked through and the bacon is fully rendered, to an internal temperature of at least 145F.

Serve on a mayonnaise spread bun with sliced jalapeno rings and a drizzle of barbecue sauce.
