Techniques
  • salted boiling water
  • ice bath
Blanch the green beans in salted boiling water 3 minutes, then plunge into an ice bath to stop the cooking and keep the colour.
Drain on a paper towel lined plate.
Mixing the butter and sugar glaze
  • butter
  • brown sugar
  • soy or Worcestershire sauce
  • garlic and herb seasoning
In a small bowl mix butter, brown sugar, a little soy or Worcestershire sauce, garlic and herb seasoning and grated garlic.
  • 4–5 whole green beans
  • grated garlic
  • bacon
Cut bacon slices in half. Lay four or five green beans on one edge of a half slice and roll up; set seam side down on a parchment-lined baking sheet.
Wrapping the bundles in bacon
Spoon the sauce all over the bundles.
Bake at 400 degrees, 25 to 30 minutes in total.
Halfway through, take them out and baste the bacon with the glaze using a pastry brush so it caramelizes, then return to the oven to finish.
