Techniques
  • 1 lb green beans
  • 3 lb boneless, skinless chicken thighs
Season both sides of the chicken thighs with a little salt and black pepper.
Heat a skillet over medium-high heat with about 3 to 4 tablespoons olive oil.
  • salt
  • black pepper
  • 3–4 tbsp olive oil
Brown the chicken on both sides until golden, about 3 to 4 minutes per side, in two batches if needed; a screen cover keeps the oil from splattering.
  • 1 whole onion
Transfer the chicken, not yet fully cooked, to a plate. Reduce the heat to medium-low, or turn it off if the pan is too hot.
Cook the finely chopped onion over medium-low about 8 minutes, until soft and golden.
  • 4 cloves garlic cloves
Add the grated garlic and warm a couple of seconds until fragrant.
In a mixing bowl, whisk the chicken broth with the mustard.
  • ¾ cup chicken broth
  • 1 tbsp mustard
  • 1 tsp thyme
Add the green beans to the skillet in an even layer with the thyme; season with a little salt and pepper, add the broth and mustard and bring to a boil.
  • grape tomatoes
  • pitted olives
Take off the heat; add the grape tomatoes and pitted olives and place the chicken back on top.
Bake in an oven preheated to 400F on the middle rack, 30 to 40 minutes, until the green beans are fork tender.
