  • room temperature cream cheese
  • plain Greek style yogurt
  • tomato paste
  • 1 whole lime
Combine the room-temperature cream cheese, Greek-style yogurt and tomato paste; squeeze in the lime.
Chicken curry as a dip
  • garlic
  • chopped cilantro
  • kosher salt
  • freshly ground black pepper
  • garam masala
  • smoked paprika
  • ground cumin
  • ground coriander
Add the garlic and chopped cilantro (mostly stems); season with kosher salt, black pepper, garam masala, smoked paprika, cumin, coriander, turmeric, ground ginger and cayenne.
The creamy, tangy base
  • turmeric
  • ground ginger
  • cayenne
Mix with a spatula until mostly combined.
The curry spices
  • thinly sliced green onions
  • grated mozzarella cheese
Add the sliced green onions and grated mozzarella.
  • 3 cup chopped cooked chicken
Pull the chicken off a rotisserie chicken in big chunks and chop into about half-inch pieces; mix in about three cups.
Transfer to a baking dish (or several smaller ones to bake in turn), spread evenly and smooth the top.
Top with a little more mozzarella and a shake of cayenne.
Bake in the center of a 450F oven for about 20 minutes, until the cheese is melted and the dip is heated through.
  • finely diced jalapeno
  • finely chopped red onion
  • finely chopped cilantro
Rest a few minutes while garnishing with diced jalapeno, chopped red onion and chopped cilantro.
Can be prepped the day before and held in the baking dish ready to bake.
