Techniques
  • 1 lb pearl onions
Peel the pearl onions (or buy them peeled or frozen).
  • ¼ cup olive oil
  • salt
Cook the onions in a pot with about a quarter cup of olive oil and a heavy pinch of salt over medium heat, stirring now and then, until soft and golden, 8 or 9 minutes.
Cooking the onions golden
  • 3 cloves garlic cloves
  • 2 tbsp balsamic vinegar
Add three peeled garlic cloves and about two tablespoons of balsamic vinegar and warm the garlic through, moving the onions little so they hold together.
  • 1 cup crushed tomatoes
  • 2 whole bay leaves
  • salt
  • black pepper
  • crushed red pepper flakes
Add about a cup of crushed tomatoes (a can pureed in the blender), two bay leaves, more salt, black pepper and a pinch of crushed red pepper flakes. No need to cook it down.
  • 2 lb cod
  • salt
Rinse two pounds of skinned cod fillets in cold water and pat dry; pour the sauce over and season each fillet with a pinch of salt.
Bake at 400F until the fish is flaky and firm in the center, about 30 minutes.
Rest about 10 minutes before serving so the sauce settles.
