Techniques
  • olive oil
  • garlic
Drizzle plenty of olive oil into a baking pan or glass baking dish, add finely minced garlic and mix, so the garlic infuses the oil as it bakes.
  • 2 pint cherry tomatoes
  • kosher salt
  • black pepper
Add two pints of cherry tomatoes and toss with a spatula to coat. Season with kosher salt and black pepper; little salt is needed, as feta is salty.
  • 10 oz feta
Make a space in the centre and add 10 oz of creamy, mild feta.
More feta, balsamic and oregano
  • balsamic vinegar
  • dry oregano
  • red chili flakes
  • olive oil
Drizzle the cheese with balsamic vinegar; add a pinch of dried oregano and red chili flakes, then a big drizzle of olive oil over the top.
Bake at 450F for 30 to 35 minutes, until the tomatoes are very soft and the cheese browned.
  • cavatappi
  • salted water
When the bake is seven or eight minutes from done, cook the pasta in salted water per the package. Reserve about half a cup of pasta water before draining, and time it so the pasta is hot when the feta comes out.
Smash and stir the feta and tomatoes into a sauce with a fork.
  • 2–3 tbsp pasta water
  • basil
Add sliced basil and two or three tablespoons of pasta water, then the hot pasta; mix until coated, adding a splash or two more pasta water to keep it saucy, since it keeps absorbing.
  • salt
Taste and adjust salt. Serve with more basil.
