Ingredients
Method
Techniques
  • 2 tbsp olive oil
  • onions
  • celery
  • potatoes
Add about two tablespoons of olive oil to the pot with the chopped onions and celery; no garlic. Cook the aromatics a couple of minutes, neither caramelized nor too translucent.
  • ½ cup tomato sauce
Add about half a cup of tomato sauce and cook a minute.
Add the potatoes, peeled, cut into bite-sized pieces and kept in water so they do not brown; mix.
  • water
Add water as much as needed and cook half an hour to 45 minutes until the potatoes are very tender.
Mixed pasta, and water quanto basta
Preheat the oven to 180 (Laura: 350F).
Cooking the potatoes down
Increase the oven to 400F, as Nonna asked.
  • mixed short pasta (pasta mista)
  • pepper
  • smoked matz
With everything at a boil, add the mixed pasta and cook only about half its time, another five to seven minutes, since it finishes in the oven. Add a little pepper if wanted.
  • salt
  • parm
  • Italian seasoned panko
Transfer to a ceramic baking dish (no need to grease ceramic; butter or oil another dish).
Assembling in the baking dish
Top with the smoked cheese, then the parm and Italian seasoned panko, and a little olive oil.
  • olive oil
Variation: make the same dish with rice instead of pasta.
Bake about 20 minutes in the hot oven until the top is golden brown.
It can be eaten right away, but let it sit a little.
