Techniques
- 2 whole sweet potatoes
Peel the sweet potatoes and cut into quarter-inch-thick fries.
- cold water
- ice
For the soaked method, cover the fries with ice water or cold water and refrigerate overnight (these soaked 24 hours) to draw off excess starch. Cut a second batch for the unsoaked method.
- 1 tbsp cornstarch
Drain the soaked fries, give a final rinse, and pat dry with a clean kitchen towel.
Sprinkle a good-size tablespoon of cornstarch over each batch for a light coating (or shake in a plastic bag).
- olive oil
Spread each batch on its own baking sheet and mist all over with olive oil.
Oil all over, not a drizzle
- fine sea salt
Heat the oven to 400. Sprinkle the fries with fine sea salt. Spread them out so they do not touch, using more sheets if needed.
Bake at 400 degrees for 8 to 10 minutes, flip, keep them spaced, and bake 8 to 10 minutes more until crispy.
Variation: compare the soaked and unsoaked batches; in a blind taste the soaked ones won 'by a hair' and they were almost the same - soak if prepping the night ahead.
