  • 1 whole onion
  • 8 cloves garlic
Chop the onion; smash and mince the garlic.
  • 2–3 tbsp oil
Heat 2 to 3 tablespoons of oil in a large skillet until it shimmers.
Shimmering oil and sweating the onion
Cook the onion, stirring with a wooden spoon, about 5 minutes until almost translucent, without burning; lower the heat if needed.
  • 1 lb ground Italian sausage
Add the ground Italian sausage and the garlic, breaking the meat up, and cook until uniformly browned with no pink left.
Browning the Italian sausage
  • marinara sauce
  • 1 tbsp Italian seasoning
  • red pepper flakes
  • 1 can whole peeled tomatoes
  • salt
  • freshly cracked ground pepper
Add the marinara sauce, about a tablespoon of Italian seasoning, red pepper flakes to taste, a can of whole peeled tomatoes, and salt and pepper to taste; break up the tomatoes.
Reduce to medium-low and simmer about half an hour to thicken.
Set the oven to 350 and get a casserole dish ready.
  • 1 lb ziti
  • water
  • 1 tbsp salt
Bring a pot of water to a boil, salting it at about a teaspoon per quart, and cook the ziti to al dente.
  • ⅔ cup Parmesan cheese
Grate about two thirds of a cup of Parmesan.
Return the drained pasta to the pot and stir in about two cups of the sauce to coat.
Coating the pasta in sauce
  • ½ cup ricotta
Spoon a little sauce over the bottom of the casserole dish; add half the pasta in an even layer, then half the remaining sauce, half the Parmesan, about half a cup of ricotta in dots, and about two cups of mozzarella.
  • 2 cup mozzarella
Add the rest of the pasta, the remaining sauce, the remaining Parmesan, more dotted ricotta and the rest of the mozzarella, with a final sprinkle of Parmesan.
Layering the casserole
Bake at 350 for about 40 minutes, until bubbling.
