Techniques
  • 4 whole ripe bananas
Set the oven to 350.
Peel four to five very ripe bananas and mash them in a measuring cup; two cups is the target.
An underripe banana can be baked at 350 for 10 minutes first to soften it and break down the sugars.
  • 1 tbsp lemon juice
  • ½ cup milk
  • 420 g all-purpose flour
  • 1 tsp cinnamon
  • 1¼ tsp baking soda
  • 1 tsp salt
Transfer the mash to a larger bowl and mix in a tablespoon of lemon juice and half a cup of room temperature milk.
The wet mix: lemon juice and milk
  • 226 g unsalted butter
  • 300 g granulated sugar
  • 220 g light brown sugar
In another bowl whisk 420 g all-purpose flour, a teaspoon of cinnamon, one and a quarter teaspoons of baking soda and a teaspoon of salt until well mixed.
In the stand mixer beat 226 g softened unsalted butter, 300 g granulated sugar and 220 g light brown sugar on medium high for three to four minutes until light and fluffy, scraping down as needed.
Reduce to medium and add four eggs one at a time, waiting for each to incorporate and scraping the bowl down about halfway.
Adding eggs one at a time, and vanilla
  • 4 whole eggs
  • 15 ml vanilla
Add one tablespoon of vanilla.
Alternate the flour and the banana mixture in three batches on low, starting and ending with the flour, so the butter mixture does not break.
Alternating flour and banana
Stop the mixer while streaks of flour remain and fold the rest in by hand with a spatula, scraping the bottom of the bowl; overmixing makes the cake gummy and dense.
Line a nine by 13 inch baking pan with a parchment cradle, transfer the batter and smooth it level with an offset spatula.
  • ¾ cup toasted walnuts
Variation: fold in about three quarters of a cup of toasted walnuts or pecans, or the same amount of chocolate chips, or both.
  • 8 oz cream cheese
Bake at 350 for 55 to 60 minutes, or until a skewer inserted in the middle comes out clean, then cool.
  • 113 g unsalted butter
For the frosting, beat an eight ounce block of softened cream cheese with 113 g softened unsalted butter on medium about two minutes until creamy and well combined, scraping as necessary.
  • 2 tsp vanilla extract
  • 4½ cup powdered sugar
Add two teaspoons of vanilla extract and mix on medium until just combined.
Add about four and a half cups of powdered sugar on low to medium-low, tasting as you go, scraping the bowl down.
Once fully incorporated, beat on medium for one minute until fluffy.
Frosting, freezing and serving
Lift the cooled cake out onto parchment, spoon the frosting on top and spread it into an even layer or give it some swoops.
  • cinnamon
  • banana coins
Garnish with a sprinkle of cinnamon or banana coins, then cut and serve.
