Oven, butter and ripening bananas
Variation: ripen underripe bananas in the oven at 350 for 10 minutes until blackened and gooey.
- 180 g flour
- 1 tsp baking soda
- ½ tsp salt
- ⅔ cup sugar
Whisk together the flour, baking soda, salt and sugar; set aside.
The dry ingredients
- 3 whole medium bananas
Mash the bananas with a fork, leaving some chunks if you like.
- 1 whole room temperature egg
- 1 tsp vanilla
Mix in the egg and vanilla, then the melted butter.

Fold the dry ingredients into the wet gently with a spatula until almost combined; overmixing makes dense, gummy muffins.
- 1 cup semi-sweet chocolate chips
Fold in the chocolate chips, reserving a handful, until evenly distributed.
Line a muffin tin with papers and fill them all the way to the top; top with the reserved chocolate chips.
Filling the tin to the top
Bake at 375 for 18 to 20 minutes, until the centres are set; check with a toothpick if unsure.
