If the bananas are green or just yellow, bake them on a baking sheet at 350 for about 10 minutes until blackened all over.
  • 180 g all-purpose flour
  • 150 g granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¾ tsp kosher salt
Whisk the flour, granulated sugar, baking powder, baking soda and kosher salt in a big bowl; set aside.
  • 113 g butter
Melt the butter in the microwave, with paper on top to contain splatters.
Melting the butter
  • 1½ cup bananas
Heat the oven to 425.
Measure the banana (too much makes the muffins sink into pudding) and mash with a potato ricer or fork, as smooth or chunky as wanted.
  • 2 whole eggs
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
Add the melted butter, the room-temperature eggs, vanilla and cinnamon; mix the wet ingredients.
Fold the wet into the dry until just combined; overmixing develops gluten and makes dense, gummy muffins. Add any mix-ins (nuts, raisins, chocolate chips, coconut) halfway through.
Line a muffin tin with papers and fill them almost full with a scoop, or overfill and make fewer for taller muffins.
Filling the muffin tin
  • cinnamon sugar
Optionally top with cinnamon sugar.
Bake at 425 for 5 minutes.
Reduce to 350 and bake another 15 minutes, until the centres spring back when touched lightly.
