Techniques
  • brown sugar
  • butter
  • vanilla
  • cinnamon
Cook brown sugar and butter a couple of minutes -- it looks crumbly and grainy -- then take off the heat and stir in vanilla and cinnamon.
Brown sugar caramel
Pour the caramel into a very well greased nine inch metal cake pan.
  • 2–3 whole bananas
Cover the whole surface of the caramel with banana slices, not too thin or they disintegrate; set aside.
  • 2 whole bananas
Mash two bananas with a fork on a plate and set aside.
  • softened butter
  • brown sugar
  • granulated sugar
In a large bowl, mix softened butter with brown sugar and granulated sugar using a spatula; it need not be fully combined.
Mixing the batter
  • 2 whole eggs
  • vanilla
Add the eggs, a splash of vanilla and the mashed bananas and combine.
  • flour
  • baking powder
  • salt
  • milk
Add flour, baking powder and salt with some milk and mix into a batter.
Pour the batter over the sliced bananas and caramel, smooth the top, and bake in an oven preheated to 350 until fully baked.
Wait exactly five minutes after it comes out, no longer, then place a plate on top, flip it over with a towel and lift off the pan.
Turning the cake out
Serve with a scoop of ice cream, such as butter pecan.
