Melted butter and the lined sheet

Line a baking sheet with parchment paper and butter the parchment.
Keep the filo under a damp cloth. Brush a filo sheet with butter, lay a second sheet on top and brush it too.
Layering, rolling and coiling the filo
Spread a layer of filling over the sheets with an offset spatula, roll up tightly like a cigar, and coil onto the baking sheet; repeat, continuing the spiral.
Filo that has been frozen about a year falls apart when handled.
Brush butter over the top of the coil.
Bake at 400F for 45 to 50 minutes until golden brown on top, flaky and cooked through.
