Techniques
  • 175 g bacon
Heat a heavy bottom pot over medium on the stove and add the small diced bacon.
Render the fat out gently 10 to 15 minutes, stirring every five minutes, until the bacon has colour and has released most of its fat.
  • 150 g white onion
  • 50 g jalapenos
  • 15 g garlic
Add the diced white onion, jalapenos and minced garlic, stir with a wooden spoon and scrape the browned bits off the bottom.
Fry about 10 minutes, until the vegetables have colour and are nearly fully softened.
  • 325 g ketchup
  • 100 g molasses
  • 50 g brown sugar
  • 30 g Worch
  • 30 g yellow mustard
  • 30 g hot sauce
  • 20 g cider vinegar
  • 7 g chili powder
  • 2 g black pepper
Add the ketchup, molasses, brown sugar, Worcestershire, yellow mustard, hot sauce, cider vinegar, chili powder and black pepper and stir to combine.
Barbecue sauce and canned beans
  • 2 can cannellini beans
  • 4 can cannellini beans
Add two cans of cannellini beans with their liquor, then four more cans that have been rinsed.
  • 400 g water
Add 200 grams of water, stir, then another 200 grams for 400 in total, and stir gently from here on.
Bring to a gentle simmer, then bake at 350F about 90 minutes, stirring at least twice.
After 30 minutes, stir the caramelized top back in so new surface can roast.
Cook another 40 to 60 minutes, until reduced and the liquid has thickened into a sticky shiny sauce.
Loosen with a few splashes of water or stock if needed, since the beans thicken further as they cool.
