Heat a large fry pan over medium heat with the olive oil.
  • 90 ml extra virgin olive oil
  • 2 whole potatoes
Cut two washed and dried potatoes into rounds a quarter inch thick, all of a similar thickness.
Season the flour with sea salt and black pepper and mix.
Seasoned flour and parsley egg wash
  • 60 g all purpose flour
  • sea salt
  • freshly cracked black pepper
  • 2 whole eggs
  • 8 g chopped fresh parsley
Beat the eggs with the chopped parsley, sea salt and black pepper in a separate bowl.
Coat the potato slices in the flour, then in the beaten egg, and lower into the hot oil in a single layer.
Fry 4 to 5 minutes per side until golden and cooked through, about 9 to 10 minutes total; work in about three batches.
Drain the potatoes on paper towels; hold them in an oven at its lowest setting.
Heat a second fry pan over medium heat with the remaining olive oil.
  • 60 ml extra virgin olive oil
  • 3 whole cod fillets
Pat the cod fillets completely dry on paper towels.
Season the cod with salt and pepper on one side, then cut each fillet in half to give six pieces.
  • 60 g all purpose flour
  • 1¼ g sweet smoked Spanish paprika
  • sea salt
  • freshly cracked black pepper
Mix the flour with the smoked paprika, sea salt and black pepper; turn the cod pieces in it until coated.
Fry the cod in a single layer 2 to 3 minutes per side, about 5 to 6 minutes total, until golden and cooked through.
Drain the cod on paper towels.
  • lemon wedges
  • fresh parsley
Plate the potatoes and cod together and garnish with lemon wedges and fresh parsley.
