Ingredients
Method
Techniques
  • 8 oz sour cream
  • 2 tbsp mayo
  • ½ lemon lemon juice
Mix the sour cream, mayo, lemon juice and jalapeño juice with the jalapeños, dill, garlic salt, salt and black pepper.
Jalapeno sauce instead of tartar
  • 1 tbsp jalapeno juice
  • jalapenos
  • dill
  • garlic salt
  • salt
  • black pepper
Taste the sauce for salt and adjust, then refrigerate it while the fish and chips are made.
  • 2 inch peanut oil
Heat about two inches of peanut oil in a pot over medium heat.
  • 2 lb white fish
  • potatoes
Cut the white fish into pieces about an inch thick; drain the soaking potatoes and pat everything dry.
  • garlic salt
  • black pepper
Season the dried fish with garlic salt and black pepper and set aside.
  • ½ cup all purpose flour
  • ½ cup instant corn masa
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp oregano
Mix the flour, corn masa, black pepper, salt, garlic powder, onion powder, chili powder, oregano and baking powder.
Beer batter with corn masa
  • ¼ tsp baking powder
  • 1 whole egg
  • 12 oz beer
Beat one egg into the dry mix, then pour in the beer while mixing.
Keep mixing until there are no clumps; the batter should be neither too thick nor too runny.
Set the oven to its lowest setting to hold the cooked fries.
  • salt
  • black pepper
Fry the potatoes in batches for seven minutes, lift out, sprinkle with salt and black pepper and hold in the oven.
Stir the batter, dip each piece of fish, shake off the excess and fry about seven minutes until golden; work in batches.
  • lemon
Serve the fish and fries straight out of the oil with lemon and the chilled jalapeño sauce.
Serving and tasting
Variation: for a tartar sauce instead, leave out the sour cream and use only mayo, and use radish in place of the jalapeño.
