Ingredients

Techniques
  • ½ cup red lentils
Rinse the red lentils and put them in a pressure cooker (or a regular pot).
Pressure-cooking the red lentils
  • 3 cup hot water
  • 1 tsp turmeric powder
  • 1 tsp oil
  • 1 tsp salt
Add the hot water, turmeric, oil and salt; pressure cook 10 minutes.
Switch off the heat, let the pressure release naturally, then open the lid.
Smooth the dal with a stirrer, whisk or hand blender; keep it runny for serving with rice, or use less water for a thicker dal.
  • 1 tbsp oil
  • 2 whole dry red chillies
  • 1 tsp panchforon
Heat the tablespoon of oil, lower to low, add the dry red chillies and panchforon; as soon as the seeds splatter, switch off the heat.
Pour the hot spiced oil into the dal and cover immediately so the flavour infuses.
