Techniques
  • mayo
  • ketchup
  • pickle relish
  • white onion
  • chalula
  • mustard
Mix the sauce: mayo, ketchup, pickle relish, a little white onion, a little hot sauce and one squeeze of mustard.
A guessed Big Mac sauce
  • head lettuce
  • dill pickles
  • frozen fries
Cut the iceberg lettuce, then cut across once more to shorten the strands. Slice a bunch of dill pickles.
  • American cheese
First fry of the frozen fries, about five minutes, giving them a shake so they do not stick; let them sit before a second fry.
Cut a block of American cheese into little curd-size chunks.
  • ⅓ lb ground beef
Form a patty from about a third of a pound of ground beef.
Warming a mayo sauce without breaking it
Put the sauce in a bowl set over a small pot of bubbling water, the water not touching the bowl, and stir over low heat so the mayo warms slowly without breaking.
  • oil
  • salt and pepper
Cook the patty in a little oil with salt and pepper, chopping it up like a chopped cheese; it takes a couple of minutes.
  • salt
Drop the fries for their second fry until crisp; salt them.
Building the poutine
  • sesame seed topping
Build: fries, cheese chunks, warm sauce, a little lettuce, the beef, raw onion, pickle and sesame seed topping.
