Techniques
  • 12 whole dinner rolls
  • 1 lb ground beef
  • ½ tsp black pepper
  • ¾ tsp salt
In a large bowl, season a pound of ground beef with half a teaspoon of black pepper and three quarters of a teaspoon of salt; mix well with clean hands or gloves.
Seasoning the beef
Line a 13 by 8 baking sheet with parchment and press the meat into a thin even layer with wet hands.
Lay parchment on top and press with a second baking sheet of the same size, not so hard the meat goes out the sides; remove the top parchment.
Cut the sheet of meat into patties, using a dinner roll as a guide; flip and cut the other side.
Freeze at least 45 minutes.
  • ½ cup mayo
  • 1½ tbsp pickled relish
  • 1 tbsp minced white onion
  • 1 tsp white vinegar
  • 1 tsp ketchup
  • 2 tsp yellow mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp paprika
  • ½ tsp salt
Mix the mayo, relish, minced white onion, white vinegar, ketchup, yellow mustard, garlic powder, onion powder, paprika and salt; taste and adjust the salt.
Special sauce
  • butter
  • sesame seeds
Halve the rolls, set them on a buttered baking sheet, butter the tops and sprinkle with sesame seeds.
Bake five minutes at 350.
Cooking the meat and assembling
Cook the meat in a skillet over medium-high heat about three to four minutes per side, cut in half to make flipping easy.
  • shredded lettuce
  • onion
Spread the special sauce on the buns, top with shredded lettuce, onion on half the buns, and one pickle per slider.
  • 1 whole pickle
  • American cheese
Add the meat, top with American cheese and the bun tops, and cut apart.
