Ingredients
Method
Techniques
  • unsalted room temperature butter
  • 130 g white sugar
Beat the butter and sugar 4 to 5 minutes on medium high until light and fluffy, scraping down the bowl.
  • 125 g all-purpose flour
  • 125 g cake flour
Sift the all-purpose and cake flours together onto parchment with the salt and baking soda.
  • 2 whole large eggs
Beat in the eggs until well combined.
Alternating wet and dry in thirds
  • 30 g honey
  • 60 g sour cream
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 60 g whole milk
Whisk honey, sour cream, vanilla and lemon extracts and milk together in a spouted vessel.
  • 1 tsp kosher salt
  • ½ tsp baking soda
Add the dry and wet ingredients alternately in thirds, beating and scraping down, until the batter is thick and smooth; finish with a manual mix.
Scoop equal amounts well apart onto a silpat or parchment.
Bake at 350F for 12 to 15 minutes until lightly browned at the edges; cool on the sheet.
  • 200 g powdered sugar
  • 1 tsp vanilla extract
  • 30 g light corn syrup
  • water
Mix powdered sugar, vanilla, corn syrup and a splash of water to a thick fondant icing; add white food coloring; press plastic wrap onto the surface.
Vanilla and chocolate fondant icing
  • white food coloring
  • 30 g dark cocoa powder
  • 5 g white corn syrup
Make the chocolate fondant the same way with dark cocoa powder and an extra 5 g corn syrup.
Spread vanilla fondant over half of each cooled cookie with an offset spatula; let it set, giving a second coat if it sinks in.
Icing half and half
Apply the chocolate fondant to the other half, defining the center line.
Let the fondant set completely, 2 to 4 hours.
A softer version with brown sugar and baking powder
  • ¾ tsp baking powder
Variation: swap the white sugar for brown sugar and add 3/4 teaspoon baking powder to the dry ingredients for a softer, moister cookie; bake the same way.
