Ingredients
Method
Techniques
Heat the oven to 350.
Measuring flour without packing it
  • 210 g all-purpose flour
  • ¼ tsp baking soda
  • 1 tsp baking powder
  • ¾ tsp sea salt
Whisk the flour, baking soda, baking powder and salt together in a medium bowl.
  • 220 g light brown sugar
  • 113 g melted unsalted butter
Whisk the light brown sugar with the melted butter until it lightens.
  • 1 whole egg
  • 2 tsp vanilla
Whisk in the egg and vanilla vigorously.
Egg and vanilla
  • ½ cup walnuts
  • ¾ cup white chocolate chips
Roughly chop the walnuts, reserving less than a handful of walnuts and white chocolate chips for the top.
Fold the dry into the wet with a spatula only until almost combined, scraping the bowl, and stop as the flour disappears - overmixing gives a gummy blondie.
Keeps three days sealed at room temperature or a week in the fridge; warm slices at half power in the microwave for 15 seconds.
  • butter
Grease the pan, fit a parchment cradle over two sides and the bottom, spread the batter smooth and scatter the reserved white chocolate chips on top.

Bake at 350 for 32 to 36 minutes until the edges are set and a skewer in the centre comes out clean; the middle can stay slightly underbaked.
Cool completely in the pan before slicing.
