Techniques
  • 1 cup blue masa
  • water
Put one cup of blue masa in a bowl, add water per the package directions and mix into a dough.
Knead a couple of minutes to a smooth ball without cracks; add water a tablespoon at a time if too dry, more masa if too wet.
Weigh the dough into one-ounce balls; expect about eight.
Weighing and pressing the tortillas
Cover the balls with a moistened, not soaking, towel while the cooking surface heats.
Press each ball between the halves of an opened ziplock bag with a tortilla press or two hardback books; peel off.
Cook on a flat top or cast iron pan at medium heat, turning a couple of times, two and a half to three minutes.
Cooking the tortillas
In one pan with a little oil, cook sliced yellow onion until soft and caramelized; season with salt and pepper.
