Techniques
Heat the oven to 350F.
Melting butter in the pan
  • 70 g butter
Put the butter in the baking pan and set it in the oven to melt.
  • 450 g fresh blueberries
  • 50 g granulated sugar
In a large bowl combine the blueberries with a quarter cup of sugar.
Sweetening the blueberries
  • 1 whole lemon zest
  • lemon juice
Zest the whole lemon over the berries and add a squeeze of juice, then toss.
  • 150 g all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 100 g granulated sugar
In a second bowl whisk the flour, baking powder, salt and half a cup of sugar.
  • 240 ml whole milk
Whisk in the milk until just combined.
Take the hot pan out of the oven; the butter should be browned, not burnt, which is optional but gives a deeper nuttier flavour.
Browned butter and pouring the batter
Pour the batter into the hot buttered pan.
Sprinkle the blueberries over in an even layer, scraping in the remaining sugar and zest.
Bake at 350F for 30 to 35 minutes, a few minutes more if the berries were frozen, until golden and a skewer in the middle comes out clean.
  • ice cream
Serve with a scoop of ice cream.
