Waking up the spices
  • 2 lb ground beef
Add the ground beef and cook, stirring and breaking it into fairly fine crumbles.
Browning the ground beef
  • 1 whole bay leaf
  • tomato paste
  • minced garlic
Add the bay leaf, tomato paste and garlic; cook, stirring, about 2 minutes.
  • freshly squeezed lemon juice
  • lemon zest
  • red wine vinegar
  • Worcestershire sauce
  • mango chutney
Add the lemon juice and zest, red wine vinegar, Worcestershire and mango chutney to taste; reduce to medium-low and cook gently about 5 minutes.
Lemon, vinegar and chutney
  • 3 slices white bread
  • ½ cup cold fresh milk
Soak the bread slices in the half cup of cold milk about 5 minutes, then squeeze out the milk, keeping it.
Add the bread to the pan and mash it in until it disappears; turn off the heat and smooth the surface.
  • 1 cup milk
  • 2 whole large eggs
  • cayenne
  • salt
Whisk the cup of milk (in the bread bowl, with the squeezed milk) with the eggs, cayenne and a big pinch of salt very thoroughly so no white streaks show.
  • 3 whole bay leaves
Pour the custard gently over the meat; top with at least three bay leaves.
Bake in the centre of a 350 degree oven about 45 minutes, until golden; rest about 5 minutes before serving.
