Saute over medium five to eight minutes until softened and starting to colour.

  • 125 g Castelvetrano olives
Add a strong pinch of chili flakes and the halved Castelvetrano olives.
  • 28 oz whole peeled tomatoes
Add the pureed can of tomatoes and bring to a simmer.
Snug the seared thighs into the sauce and braise covered in a 325 oven for 45 minutes, until the chicken is pull apart tender.
Serve a thigh on a bed of the peppers, onions and olives, with baked polenta or crusty bread.
