Ingredients
Method
Techniques
  • 260 g cauliflower
  • 190 g broccoli
  • 2 tsp gram flour
  • 1 tbsp homemade ghee
Melt the ghee in a pan over medium heat.
Ghee and spluttering cumin
Add the cumin seeds and let them splutter.
  • 1 tsp cumin seeds
  • ½ tsp turmeric powder
  • ½ tsp hing
Add the cauliflower with the turmeric and the hing (optional; or finely chopped garlic).
  • ½ tsp salt
Stir on medium-high heat and season with half a teaspoon of salt.
  • water
Add a splash of water, cover and cook on medium heat 5 minutes; crush the black peppercorns meanwhile.
  • ½ tsp salt
Add the broccoli with another half teaspoon of salt; broccoli goes in later because it gets tender faster than cauliflower and would turn mushy.
Why the broccoli goes in later
Cover on medium heat 3 minutes.
  • ¼ cup frozen green peas
Add the frozen green peas, then the gram flour, which absorbs remaining moisture and adds a nutty flavor.
  • 1 tsp ground coriander
Add the ground coriander, cover on medium-low heat 3 more minutes until tender; give it more minutes if needed without letting it turn mushy, and stir little so the florets stay intact.
Peas, gram flour and coriander
  • 1 tsp black peppercorns
  • lemon juice
Add one heaped teaspoon of the crushed black pepper and finish with a sprinkle of lemon juice.
