Techniques
- 200 g powdered sugar
Beat in the sugar, partly to bring the butter's temperature down so it does not prematurely cook the egg.
- 1 whole egg
Beat in the egg. With granulated sugar, beat an extra couple of minutes here to let it dissolve.
- 10 g kosher salt
- ½ tsp baking soda
- 8 g vanilla extract
Beat in the kosher salt, the baking soda and the vanilla extract.
Salt, baking soda and vanilla
- 230 g bread flour
Mix in the bread flour until smooth. The dough should be just a little too sticky -- not sticky at all gives tall dry scone-like cookies, much stickier and they spread thin.
Bread flour and getting the dough sticky
Weigh 115 gram portions, roll into golf balls on a bare pan and flatten each into a puck.
Preheat the oven to 375F, 190C convection, then turn it off and turn the broiler to high.
Broil 90 seconds at most, until the domes are golden brown and cracking, then pull them before they burn. Brown multiple pans one at a time.
Turn the broiler off, give it a minute or two to cool, and turn the convection bake back on. They need about eight more minutes; pull them looking a hair underbaked.
Let them cool and solidify on the pan before scraping them off with a thin spatula.
