  • 4 lb whole chicken wings
Break the wings down by cutting through the two joints, between flat and drumette and between wingtip and flat; freeze the wingtips for stock.
Breaking down whole wings
  • 15 g salt
  • 15 g baking powder
Dry brine in a large bowl with 15 grams of salt and 15 grams of baking powder, tossing until every wing is evenly caked.
Lay them on a wire rack over a half sheet tray in groups of six, alternating flat and drumette so they cook evenly.
Dry uncovered in the fridge at least four hours and preferably 24, until the skin is thoroughly dehydrated -- wet wings will not get crispy.
Lift the rack and slide a sheet of foil underneath to catch the drippings.
Set the broiler to high with the oven rack 8 inches below the flame, and load the tray parallel to the burner rather than perpendicular.
Broil five minutes.
  • 75–100 g diced fresh mango
  • 1 whole habanero pepper
  • 30 g lime juice
  • 15 g apple cider vinegar
  • 1 g paprika
  • 25 g Frank's hot sauce
  • 100 g honey
Blend the mango, habanero, lime juice, apple cider vinegar, paprika, hot sauce and honey on high about a minute until very smooth.
  • 25 g butter
Melt the butter in a small saucepan.
Add the pureed mango habanero base to the foaming butter, bring to a simmer and reduce by about 30 percent over medium for five to ten minutes, until a spatula leaves a lazy trail.
Flip all 24 wings and broil the backside another five minutes.
  • 125 g hoisin sauce
  • 100 g soy sauce
  • 15 g sesame oil
  • 125 g honey
  • 20 g minced garlic
  • 20 g fresh ginger
Combine hoisin sauce, soy sauce, sesame oil, honey, minced garlic and microplaned ginger in a pot.
Bring to a simmer; once the sugar makes it bubble up rapidly, drop to low and reduce gently about 10 minutes until it holds a trail, judging the thickness after five minutes of cooling.
Flip the wings every five minutes for four flips in total, 25 minutes of broiling, rotating the tray or turning a dark wing over to manage the browning.
