Techniques
  • 190 g graham crackers
  • 2 tbsp sugar
  • ¾ tsp salt
Put the graham crackers in a Ziploc bag with the sugar, salt and milk powder.
The graham cracker crust
  • ¼ cup milk powder
  • ¼ cup heavy cream
  • 4 tbsp melted butter
Mix with your hands, add the heavy cream and the melted butter and toss together; it is ready when a squeezed handful holds its shape.
Press 210 grams of the crust mixture tightly into the bottom and sides of a pie dish, keeping the leftover crumbs.
  • 125 g 72% dark chocolate
Combine the dark chocolate and six tablespoons of butter in a bowl and melt them.
  • 6 tbsp butter
  • 150 g sugar
  • 2 whole eggs
In a stand mixer with the whisk attachment, whip the sugar and two eggs 3 to 4 minutes until fluffy and pale yellow and the batter ribbons off the whisk.
Swap the whisk for the paddle, add the melted chocolate, mix briefly on low then a minute on medium.
Add the flour, cocoa powder and salt and mix on low 45 seconds to a minute.
  • 40 g flour
  • 3 tbsp cocoa powder
  • ½ tsp salt
  • ½ cup heavy cream
Stream in half a cup of heavy cream.
  • 45 g graham cracker crumbs
Fold in the leftover graham cracker crumbs, around 45 grams.
Scrape the batter into the crust; it will not fill the shell until it puffs up in the oven and develops a sugary crust.
Bake at 350 for 25 minutes.
