Ingredients
Method
Techniques
- pizza dough
- red onion
Freeze-dry an entire burger overnight; blend the patty, bun, tomatoes, onion, kelp ring, lettuce and cheese into a fine burger seasoning.
- olive oil
- tomatoes
Blanch the tomatoes so the skins peel easily, peel and dice them.
- yellow onion
- white onion
- ketchup
Cook the red, yellow and white onions in a little olive oil; add ketchup in place of sugar to caramelize them.
- pickle juice
Add the tomatoes, finish the sauce with a little pickle juice and blend it with an immersion blender.
- freeze-dried burger
- mayonnaise
- pepper
- yellow mustard
- pickle juice
- pickles
Make a special sauce: mayonnaise, pepper, ketchup, a little yellow mustard, a touch of pickle juice and very finely chopped pickles; put it in a squeeze bottle.
Press the dough out olive-oil side up like a focaccia; the seasoning will not fold into the dough, so rub it over the outside, and let it rise again.
Seasoning the dough and the bun crust
- ground beef
- salt
- chili powder
- garlic powder
- onion powder
- MSG
Season the ground beef with a big pinch of salt, pepper, chili powder, garlic powder, onion powder and MSG; break it into the smallest bits and cook until very crumbly and crisp.
Pour the beef into a strainer over a bowl and press out the oil.
- flour
Press out the dough with a little flour; spread the sauce from the centre outward.
Topping Nick's pizza with beef, singles and sesame
- American cheese singles
Scatter a light layer of beef, hidden under the cheese; lay on American cheese singles as on a burger, leaving less in the middle.
- sesame seeds
Paint the crust with olive oil and scatter sesame seeds over it section by section.
Finish on a prepared charcoal grill for extra flavour and grill marks on the bottom.
