  • 2 whole small salad cucumbers
variation: for the thin, runny cacik, stir some water into the yogurt before adding the rest.
Two kinds of Turkish cacik
Top and tail the cucumbers and shred them on the large side of a box grater over a paper towel, or dice them very finely.
  • 4 tbsp fresh lemon juice
Squeeze as much liquid as possible out of the cucumber using the paper towel, or a fine mesh sieve; set aside.
  • 1 tbsp fresh dill
Pull the dill leaves off the stems and mince very finely.
  • 500 g thick Greek or Turkish yogurt
  • ½ tsp salt
  • 2 tsp dried mint
  • 1 tbsp olive oil
Put the cucumber in a mixing bowl; add the yogurt, salt, dried mint, olive oil, dill, lemon juice and minced garlic.
Mixing the cacik
  • 1 cloves garlic
Mix vigorously until well combined, thick and creamy, with the herbs evenly distributed.
Test the texture: a spoonful dropped back into the bowl should make an audible plop.
The plop test for texture
  • olive oil
  • sumac or pul biber
