Techniques
  • 2 whole medium sized zucchinis
Cut the zucchini, skin on, into rounds 1 cm thick.
  • sea salt
Put the slices in a colander over a bowl, season with sea salt and leave 10 minutes to draw out water.
  • 8 cloves cloves of garlic
Peel the garlic cloves; finely chop the mint.
  • 3 tbsp fresh mint
  • 45 ml extra virgin olive oil
Heat a large fry pan over medium heat with the olive oil; saute the whole garlic cloves 4 to 5 minutes until slightly browned, then remove.
Lay the zucchini on paper towels in a single layer and pat completely dry, wiping off excess salt.
Patting the zucchini dry
Saute the zucchini in the same pan on the same heat, stirring every 1 to 2 minutes, 8 to 10 minutes until lightly browned.
  • 30 ml white wine vinegar
  • freshly cracked black pepper
Return the garlic, add the white wine vinegar and black pepper, mix and simmer 1 to 2 minutes until the vinegar reduces by half.
Off the heat, gently mix in the chopped mint; serve from the pan or a serving dish.
