Techniques
  • 1 whole onion
  • 5 cloves garlic
  • 5 whole tomatoes
Remove one or two outer layers of the onion and roughly chop it. Peel and roughly chop the garlic. Roughly chop the washed, dried tomatoes.
Heat a large fry pan over medium heat with the olive oil, a couple of minutes.
  • 45 ml extra virgin olive oil
Add the onion and garlic and saute, stirring every minute or so, 4 to 5 minutes until the onion is translucent.
  • ½ tsp sweet smoked Spanish paprika
Stir in the smoked paprika to coat.
  • sea salt
  • freshly cracked black pepper
  • white sugar
Add the tomatoes, sea salt, black pepper and a little sugar; cook another 4 to 5 minutes until the tomatoes are lightly sauteed.
Turn off the heat and let cool slightly at room temperature.
  • 2 can canned sardines in olive oil
Drain the sardines through a fine sieve over a bowl, keeping the oil for another use; lift the sardines into a dish.
Blend the tomato mixture in a food processor 30 to 60 seconds until smooth.
  • fresh parsley
Spread some sauce on a serving dish, lay the sardines on it and turn them gently to coat; sprinkle with chopped parsley.
