Ingredients
Method
Techniques
  • ½ cup moong dal
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 2 tsp salt
  • 3–4 whole green chillies
  • 1 tsp grated ginger
  • 2 whole tomatoes
  • 2 tbsp oil
  • 1 tsp cumin seeds
Dry roast the moong dal on low heat until the edges of the lentils turn very light brown, for a nutty flavor; do not over-roast or they will not soften.
  • hot water
Rinse the roasted lentils lightly; bring hot water to a boil in a wok, add the lentils and skim off the froth.
  • cauliflowers
Add the cauliflower once the dal is about 80% cooked; it may also be fried or roasted first, or the dal pressure-cooked first.
Adding the cauliflower and spices
  • water
  • coriander leaves
Add turmeric, chili powder and salt, then water with green chillies and grated ginger; cook until the cauliflower is tender.
Add big chunks of tomato and coriander leaves.
Tomatoes, coriander and the tarka
  • 1 whole dry red chilli
  • asafoetida
For the tarka, heat oil in a small pan, add a dry red chilli, cumin seeds and a pinch of asafoetida; pour the crackling oil into the dal.
