Techniques
  • olive oil
  • 1 lb ground beef
  • 1 whole onion
  • compound butter
Heat a little olive oil in a cast iron skillet; add the ground beef, break it up and leave it in a layer with open pockets so it browns rather than steams; leave untouched a couple of minutes, then stir.
Browning the beef in a layer
When the beef is about halfway cooked, push it to one side, turn the heat to low, tilt the pan and ladle out the rendered fat, leaving about a tablespoon.
  • all purpose seasoning
Turn the heat back up, add the diced onion and the seasoning and saute until the beef is cooked through.
  • 1 pack Hawaiian rolls
Slice the pack of Hawaiian rolls through the middle in one piece.
Off the heat, melt the cream cheese into the beef with the residual heat.
  • ¼ cup cream cheese
  • American cheese
Brush melted compound butter on the bottom halves; layer cheese, the beef mixture in a single layer, more cheese, then the tops.
Assembling the sliders
  • Worcestershire
  • everything but the bagel
Add Worcestershire to the melted compound butter and brush over the tops; sprinkle with everything but the bagel seasoning if using.
Bake covered 15 minutes.
Remove the foil and bake 10 minutes more.

  • tomato
  • red onion
