Techniques
  • 1 whole large onion
  • 2 whole potatoes
  • 2 whole zucchini
  • 1 whole cauliflower
Thinly slice one large onion; peel two potatoes and slice them; slice two zucchini into thin strips; cut one cauliflower into florets.
  • olive oil
  • salt
  • pepper
Spread the vegetables on two baking trays, drizzle with a little olive oil, season with salt and pepper and roast at 425F about 25 minutes; cool.
  • bone-in chicken thighs
Skin the bone-in chicken thighs.
  • 1 whole onion
  • olive oil
  • 5–6 cloves garlic cloves
Cook a finely chopped onion in a little olive oil until soft and golden; add five or six garlic cloves.
  • 2 tsp ground allspice
  • 1 stick cinnamon stick
  • ½–1 tsp ground cumin
  • ½ tsp ground turmeric
  • 2 whole bay leaves
  • 1 whole star anise
  • 2 tsp ground coriander
  • sweet paprika
Add the allspice, cinnamon stick, cumin, turmeric, bay leaves, star anise, coriander and sweet paprika and toast until warm and fragrant, without burning.
  • 4–4½ cup chicken broth
Add the chicken and cover with about four to four and a half cups of chicken broth; bring to a boil, stirring up anything stuck to the bottom.
Reduce to medium and cook about 30 minutes until the chicken is cooked through.
  • 2 cup basmati rice
  • cold water
Rinse two cups of basmati rice well under cold water and soak about 15 minutes.
  • 2 tsp salt
Drain the rice and toss with about two flat teaspoons of salt.
  • oil
Grease a cast iron skillet with a little oil; lay the zucchini strips around it, then layer the potatoes, cauliflower and vegetables on the bottom.
Layering in the cast iron skillet
Lay the chicken over the vegetables, then the rice, then the remaining vegetables; add enough broth to cover the rice.
Bring to a boil over medium-high, then reduce to low, cover and simmer about 35 minutes until the broth is absorbed and the rice is cooked.
Turn off the heat and rest 15 minutes so it settles and releases.
Set a big round platter over the skillet and, with oven mitts, flip it over; pat the back of the pan to release, and replace any stuck vegetables.
