Ingredients
Method
Techniques
  • chicken bones
  • oil
Hit the leftover chicken bones with a little oil and roast at 425 until deeply golden brown.
  • ½ whole onion
  • ½ whole fennel bulb
  • 1 whole parsnip
  • 1 whole carrot
  • 1 stalks celery
  • 6 cloves garlic cloves
Thinly slice the onion, fennel, parsnip, carrot and celery on a mandolin so the quick cook extracts as much flavour as possible; smash and peel the garlic cloves.
  • chicken feet
Cover the chicken feet with cold water, bring to a boil, drain and rinse them.
  • bay leaves
  • 1 tbsp peppercorns
  • parsley
  • water
Put everything but the reserved fat in the pressure cooker with the bay leaves, peppercorns, parsley stalks and water to the fill line; cook on high pressure one hour and let the pressure dissipate naturally.
Pour the stock through a fine mesh sieve.
  • chicken skin
Cover the reserved chicken skin with a little water, bring to a boil and cook 15 to 20 minutes until the water evaporates and the skin fries in its own fat, adding more fat if needed, until completely crisp.
  • 1 whole cinnamon stick
  • 1 whole star anise
Strain the hot fat into a heatproof bowl and infuse it with a cinnamon stick and a star anise pod.
  • 1 whole shallot
  • garlic cloves
  • chicken fat
Cover the thinly sliced shallot and garlic with chicken fat topped up with vegetable oil and heat gently until bubbling, frying slowly until golden brown and crisp.
  • ¼ cup Virginia peanuts
  • 1 tbsp cracked Szechuan peppercorns
  • 1 tbsp sesame seeds
  • ¼ tsp salt
  • ½ tsp granulated sugar
  • 1 tbsp chili flakes
Combine the chopped peanuts, cracked Szechuan peppercorns, sesame seeds, salt, sugar, finely chopped crispy chicken skin and chili flakes.
  • chickichurri
Pour the fried vegetables and their hot fat over the spices and nuts; keep in the fridge and use within a day or two.
  • 1 whole onion
  • 2 whole parsnips
  • 2 whole carrots
  • 2 stalks celery
Heat the chickichurri or vegetable oil and saute the chopped onion, parsnips, carrots and celery until translucent.
  • 1 inch fresh ginger
  • 2 cloves garlic
In the last 30 seconds grate in the ginger and garlic and saute until fragrant, then add the stock and bring to a simmer.
  • chicken thighs and drumsticks
Add the skinned chicken thighs and drumsticks and simmer about 25 minutes until the meat pulls back from the bones; set aside to cool 10 minutes.
  • pasta
Add the pasta to the pot, and while it cooks shred the chicken and chop it into bite-sized pieces before returning it.
  • parsley
  • tarragon
  • dill
  • kosher salt
  • freshly ground black pepper
Add chopped parsley and tarragon toward the end and the dill in the last two minutes, then season with kosher salt and black pepper.
Top with fresh dill and a lot of the chicken skin chili crisp.
